This salad was a complete accident. I often combine gorgonzola and strawberries in a spinach salad, but when I pulled out the spinach it had gone icky overnight. Pulled out the green leaf lettuce and spied the chunk of seedless watermelon........the rest is history. Well, modest history.
I made a little more lemon and dill dressing, beefing up the lemon juice to counteract the sweetness of the watermelon, and added a few slivers of garlic. YUM!
Hope you enjoy this soon - it is delicious!
For each plate or bowl you will need:
a handful of clean, torn green leaf lettuce
1/2 cup crumbled gorgonzola
1 cup seedless watermelon, cut in chunks ( not too small)
2 basil leaves, sliced thinly ( chiffonade)
2 T. lemon-dill dressing
Lemon-Dill dressing:
2 T. good olive oil
2 T. fresh lemon juice
1 T. herb vinegar
1 t. fresh or dried dill
1 garlic clove, cut in slivers
salt
freshly ground pepper
Mix well and keep in fridge, covered.
Assemble salad and drizzle with dressing. Serve and enjoy!

Thanks, Kalyn! I was trying to remember if this was South Beach or not, with the gorgonzola? Whatever, it is absolutely delicious and hope you try it sometime!
Oh, Barb - you really say the nicest things! I thought the pictures were a little light, but then, I am picky. So delighted you enjoy them - and come over to let me know! I really appreciate it!
Oops - that was me, Barb! Pushed the wrong button....
The combo of gorgonzola and watermelon sounds amazing!
Thank you - and your basil cookies are a must try! I love all things herb, as you might have noticed!
It's hard to believe how scrumptious the gorg and watermelon are, though I think the hint of fresh basil ( there it is, again) makes it even better.

Tbis looks and sounds incredible. Always nice to find something unique with watermelon
Thanks, Michelle! As soon as it gets warmish, seedless watermelon goes on the weekly shopping list - must say I never get tired of it! But this salad is extra-special and tasty, if you want something different.
