So, so good. So good that I drizzled a little more honey on my plate and dipped the warm scone into it, feeling much like a hungry Winnie the Pooh.
Honey drizzled apple scones
This makes 8 scones.
Preheat oven to 360F.
Line a jellyroll/cookie sheet with clean foil or parchment.
1 large Granny Smith apple, peeled and chopped, about 1 heaping cup
1 T. cinnamon sugar (I mix my own to taste) sprinkled on the apples
Toss the apples a little and set aside.
2 cups King Arthur flour
1 stick (4 ounces) cold unsalted butter, cut into small pieces
1 t. cinnamon
1/4 cup sugar
1 1/2 teaspoon baking powder
pinch of salt
3/4ths cup buttermilk plus more as needed
(you don't want the dough to be too wet, so add more
buttermilk tablespoon by tablespoon if needed)
Put the flour, sugar, cinnamon, baking powder, salt, and butter pieces in mixer bowl. Mix well, making sure the butter is incorporated, though a few bits and flakes of butter are fine.
Add the cinnamon sugar-apple mixture to the flour mix and mix briefly.
Add the buttermilk and mix quickly. If it's too dry, add a tablespoon or two more buttermilk until it forms a ball.
Remove dough to a floured surface and pat into a circle.
Cut the circle into 8 pieces and place triangles on baking sheet.
Drizzle honey generously on the tops of the scones.
Bake for 25 minutes, cool briefly, then remove and cool further on a rack.
They tend to stick because of the honey so remove carefully.

Nana - my daffodils are ahead? That surprises me! But I'm very grateful, especially because it's been so cold. It's funny about Anne Lamott - when I read a few of her books years ago, I was lukewarm, but now? Wow.
So, so perfect! And "Bird by Bird" is still one of my favorites on writing...
I make an awful lot of scones, but somehow I've never incorporated apple into a recipe! These look wonderful, especially the honey drizzled part :)
Thanks, Debra! I briefly dipped into Bird by Bird a long time ago, but for some reason wasn't as enchanted with Miz Lamott until last year. Happy to have several books to look forward to. Wrestling with writing - or even sitting down to write- hardest thing in the world for me. No wonder I prefer writing ( SHORT) poetry:)
Sue, that amazes me! NH has so many wonderful pick-your-own apple orchards we are awash come September through November, so I do have several recipes. But it is tricky if you go overboard with too many grated/sliced/diced apples due to moisture content. Glad you liked -thanks!

Hi Barb! Noah is doing fine - sleeping out his time, as he was a week or two ( never did get that straight) early. He wiffles a lot, a sweet little huffing sound - and he flutters his eyes but doesn't quite want to wake up yet. And made a batch of these for the family, and my sister, and several friends - it was crazy! I couldn't stop, and I must have eaten at least a dozen in the last two weeks. So, so good. I think the amazing honey I bought local made a huge difference - everyone kept saying: "I taste something wonderful, but can't identify it" - and promptly inhaled two more scones:)
