pickling day: red onions and cucumbers





In spite of my taking a sick day and sleeping for 12 hours - twelve hours! - the CSA box arrived again last night with more cucumbers and lovely red onions, BUT.  We still have some from last week - what to do, what to do.

Then I remembered those wonderful pickled red onions I made last year, and the Finnish cucumber salad my daughter likes so much, so spent a few hours this morning stuffing the already full fridge with those zesty condiments.  Easy to make, and delicious with everything from cold chicken or fish, to French potato salad, they're a perfect way to use up your summer abundance.  AND I used the last of the dill, mostly stems by then, to start a new bottle of dill vinegar.  So pleasing to have all three of these condiments stashed in the fridge and pantry.

Enjoying the blue, blue sky with wispy clouds overhead , the chattering of the children just back from the beach - and eyeing my bed for a little siesta:)  Enjoy your summer days!

Sorry to read you were ill - sometimes sleep is just what you need the most. Maybe all the changes in the last while kind of caught up with you. I hope you are feeling better.

I love cucumbers (so many people don't seem to care for them that much). I'm always looking for a way to use them and I think this Finnish salad looks like a good idea - it reminds me of a salad my grandmother used to make.

What other goodies do you get in the CSA delivery? Does that come year round? This time of year seems especially fun since so much is available now.

Barb - you will LOVE the Finnish cucumbers! I've already gone through all our CSA cucs - my daughter can whip through a bowl of them in a matter of minutes, and some of our neighbors tasted them last night and instantly asked for the recipe. Easy, too. The CSA is only summer into Fall, lots of garlic scapes, cabbage (I make that wonderful veggie salad with them, and Anni made roasted cabbage "steaks" - chard, lettuces (but no arugula, sadly), fresh red onions, scallions, turnips, kohlrabi, small baskets of new potatoes, Tuscan kale, a very few tomatoes, peas, green beans. Sometimes it's hard to keep up with the weekly delivery, but it's fun to search for new recipes! We found The New York Times recipe for kohlrabi roasted "fries" and they were delicious! Happy August to you, and hope you're having lots of fun!

Hi Katrina - my August is pretty busy. I'm walking the 3-Day, 60-Mile breast cancer walk this coming weekend. Since you are in Minneapolis now, you may see the 3-Day in the Twin Cities the weekend of August 21-23 - lots of walkers wearing pink. LOL! If you happen to see them, give them a wave or honk your horn in support!!

I love all that CSA produce delivered to your door - I'm going to search for the NYT recipe for kohlrabi roasted "fries" - I don't think I've ever had kohlrabi in any form so that will be a new experience. :-)

Best of luck with your cancer walk, Barb! I will definitely keep an eye open for them in late August!

Here I am, once again looking through the CSA box (which we pick up from a truck parked next to a garden store) - made me laugh, because there were all the ingredients for ratatouille - except the zucchini! I have to remember to copy that kohlrabi recipe to my recipe book - it is SO good! Have a great weekend!
