big, soft pumpkin cookies



It's a beautiful rainy day in New Hampshire today - what a relief from months of hot, dry weather. And when I saw Michelle's recipe for soft pumpkin cookies on this perfect indoor day, I had to make them. Oh, what a great cookie! This is a moist cookie, nice and fat, and studded with raisins - and I made them monster size, all the more to nibble.
I changed very little in her perfect recipe - a little more brown sugar, a few more spices to enhance the pumpkin, but other than that, it needed nothing.
Recipe from Big Black Dog:
Preheat oven to 350F.
Fit two baking sheets with foil or parchment.
(Remember to bake one sheet at a time or you'll get uneven baking)

2 1/2 cups King Arthur all purpose flour
1 t. baking powder
1 t. baking soda
2 t. cinnamon
1/2 t. ginger ( or grate some fresh)
1/2 t. nutmeg
1/4 t. cloves
1/2 t. kosher salt
1 stick of unsalted butter, softened
1 cup white sugar
1/2 cup brown sugar
1 cup canned pumpkin
1 egg
1 t. vanilla
1/2 cup soft raisins

Cream the butter and sugars.
Add the egg, raisins, spices, salt, baking soda, baking powder, pumpkin, and vanilla and mix.
Add the flour slowly and mix until well blended.
Using an ice cream scoop, scoop up batter and space about three inches apart.
Bake for approximately 18 minutes, though they may need a few minutes more because of the moisure. Cool and enjoy!

I is great to stay inside on a colder day and bake. I love it, too. I will take your pumpkin recipe with me to try but hoping the colder days won't arrive that quickly. It is still beautiful here around Denver.

Glad you liked, Mary! I don't know what it is that compels me to make Texas size muffins and monster cookies - maybe it saves time reaching for another, smaller nibble? Or maybe just hungry:)

Ah - it's warmed up, Kirsten, but in this old house it stays cool for a good long time. A cool kitchen is a LOT more comfortable than a hot one - the eggs and butter can stay at room temp and I can turn on the oven !

Yum! Love pumpkin cookies (especially in the fall) and I think I've had them with chocolate chips instead of raisins - either is delicious though - maybe a mixture of the two (good & evil??).

I gotta go bake some.

Barb - I agree! I'm mad about pumpkin-chocolate chip muffins, AND these awesome cookies; maybe next time I'll try combining them. Yum, yum, I love pumpkin anything, pretty much!

These look marvelous, Kat! And although it was hot and weirdly windy today (felt like a hairdryer was blowing on you when you stepped outside), a couple of blissfully cool nights (I actually put on a long sleeved shirt!) have hinted that this long, crazy, insanely hot summer really is going to finally end, and the season of cuddling up in polarfleece, cozy baking, and pumpkin and spices is on its way. I can't wait. Bookmarking this recipe now. xo :)

Oh, how wonderful to hear your voice ( sort of:), fig! We also had a summer - two months of 90-100 degrees and no rain - in New Hampshire? Whaaaaa? Funny, I was just thinking about fleece today and browsing LLBean catalogue, wondering if I could get a new jacket. Fleece, pumpkin, sweet potatoes, snow, fresh, cold air, scent of pine. We must be crazy.
