thanksgiving countdown: two pretty salads
Both of these salads add a burst of color to the overloaded Thanksgiving table. The roasted butternut with pomegranate dressing and arugula has a lovely zest to it, while the watermelon salad with gorgonzola is a real stand out!

I love the idea of the Pom dressing..and roasting some seeds for interest:) I agree both salads look refreshing and festive.I made Ina's butternut squash salad for our Cdn Thanksgiving and we enjoyed the change too..Happy Thanksgiving to you!
THEY ARE VERY PRETTY SALADS. I LIKE BUTTERNUT SQUASH IN SALADS AND I'VE HAD WATERMELON SALAD AS WELL. A NICE CHANGE FROM THE HEAVINESS THAT THANKSGIVING MEALS OFTEN ARE.
Nana - thanks for reminding me to touch base with Ina's cookbooks! I don't yet own any, so I keep taking out the single cookbook of hers at the library. LOVE her recipes and sense of design, color, and simply, good food. Glad you enjoyed the salads!
Martha - Oh, you said it perfectly! The heaviness of a huge Thanksgiving dinner is sometimes just too much. I keep it pretty simple, but, as you said, a nice green salad with fruit or vegetables is a nice interlude between all those courses. Thanks for coming by to take a look!
Thanks for this...I'm already planning ahead for my Christmas dinner (since I'll be working Thanksgiving), and was just needing a salad to round things out. I love that squash one. Although the family may look at me like I've lost my mind. I like the idea of it!
